The concept has been developed as a continuation of the culinary innovation previously demonstrated by the partners in Inja, their modern Indian-Japanese venture. With SoBo 20, an exploration of cross-cultural culinary intersections has been prioritized over mere fusion, and an entirely new experience has been curated.
A refined yet approachable ambiance has been created, where French gastronomic traditions are allowed to interact with the emotional depth of Southern American cuisine. It has been shared by Atelier House Hospitality’s leadership that a sense of creative synergy had been pursued in the planning of the restaurant.
A transformation in the InterContinental’s identity has been marked by the launch, with stakeholders expressing that a fresh, globally resonant dimension has been added to the property. The restaurant has been described as a reflection of Mumbai’s diverse urban culture, where tradition and modernity are encouraged to coexist.
Interior spaces have been designed by Essajees Atelier, where Art Deco forms have been combined with nostalgic Americana. The coastal spirit of Mumbai has been embedded into the visual narrative, allowing the environment to shift fluidly between daytime calm and evening vibrancy.
The culinary direction has been led by Executive Chef Sudeep Kashikar, under whom French classics have been revisited through the comfort-driven sensibilities of American Southern cuisine. Coastal influences from Mumbai have also been included as subtle, thoughtful accents across the menu.
The beverage program has been conceptualized to mirror the culinary ethos. Wines from both Bordeaux and Napa Valley have been offered, while cocktails have been inspired by the sophistication of Parisian cafés and the musical soul of New Orleans. The bar has been curated by mixologist Supradeep Dey, whose craft-based selections have completed the experience.
