Brine is being introduced in Bengaluru as a 120-seater restaurant and bar built around the idea of transformation and evolving experiences. The venue is being positioned as more than a dining destination, with atmosphere, emotion, and memory being woven into its identity. Modern European cuisine is being showcased through refined techniques and years of culinary experimentation, while guests are being offered a layered experience that extends beyond food and beverages.

The concept has been launched by Anirudh Nopany and Sreeram Anvesh, who stated that Brine represents their vision of creating hospitality experiences rooted in creativity, quality, and community. Following the success of Brik Oven in Bengaluru, a broader hospitality platform has now been developed through Brine. Inspiration for the restaurant’s name has been drawn from the traditional process of brining, where salt and water are used to preserve and enhance flavour over time. According to the founders, this philosophy has been translated into a menu designed to evolve through experimentation and innovation. Anirudh Nopany, Co-Founder of Brine, stated, “Transformation is at the heart of everything we create.”

A menu influenced by contemporary European cooking has been curated under the leadership of a head chef with experience in Michelin-starred kitchens. Signature dishes including Cheeseburgers, Roasted Tomato Risotto, Focaccia with Kimchi Butter, Beef Tartare, Charred Cabbage, and Bone-In Lamb Belly have been introduced. Familiar comfort foods are being reimagined through modern culinary techniques to create deeper flavours and textures.

The design of the restaurant has been developed by principal architect Animesh Nayak as a series of interconnected spaces. A copper bar, intimate lounge areas, and semi-open outdoor sections have been integrated into a single cohesive setting. Granite flooring, double-height ceilings, muted grey tones, soft lighting, and mature trees have been incorporated to create an environment that balances sophistication with warmth. Through its combination of contemporary cuisine, thoughtful design, and experience-led hospitality, Brine is being positioned as a distinctive new addition to Bengaluru’s evolving dining landscape.
