A new grab-and-go Pan-Asian food format is being introduced in India with the launch of NŌDO in Khan Market. The kitchen is being positioned around ramen, sushi, and dimsum, with a focus on speed, consistency, and portability. The concept is being designed for urban consumers who want global cuisine without committing to a traditional sit-down restaurant experience.
The launch is being presented as a response to a gap in India’s Asian foodservice market. While sushi, dimsum, and ramen have gained popularity, these categories have mostly been served through full-service restaurants or delivery-led formats. A dedicated quick-service model built specifically for takeaway and fast urban consumption has remained limited.
NŌDO’s operating model is being built around centralised preparation and on-site assembly. This structure is being used to maintain consistency while reducing turnaround time. Packaging is also being designed for movement, with sushi placed in structured trays, dimsum packed in sealed boxes, and ramen served in spill-proof containers.
The menu has been kept focused across three key categories. Ramen is being treated as a major offering, with choices across broths, noodles, toppings, and proteins. The Kimchi Umami bowl is among the highlighted dishes, combining fermented kimchi broth, gochugaru spice, greens, and protein options such as tofu, jammy egg, cheese, or egg.
The sushi range is being offered through vegetarian and non-vegetarian rolls, including asparagus tempura, avocado cream cheese, katsu chicken, and seafood dynamite. The dimsum section includes cream cheese with chilli oil, Thai nutty vegetable, charcoal chicken, and butter garlic prawn. The beverage menu is being kept limited, with quick-serve fruit-based drinks such as lychee and grape.
Shivang Gupta, Founder of NŌDO, said the brand had been created around the idea that consumers still want quality Asian food but may not always have time for traditional dining.
